Processing of white tea is relatively simple compared to the processing of green and black tea. Processing consists in the fact that after they are picked leaves that are not ripe are steamed instead of dried in air, and so they retain almost all of their good qualities and the fermentation affects them only in a very small area of about 2%. White tea has a very long history. Although not all the details are known, it is known that it was used as a drink only by emperors and wealthy, i.e. privileged people. The first time white tea was mentioned in China, naturally.

The first time the story of the white tea began during the Tang Dynasty (618-907). The story is that it was appreciated and expensive and that it was rare for anyone to drink it. The specificity of that time is also the manner of processing which was different from today’s.

White tea has been the main choice of tea for Song dynasty in China (960-1279). Because of the Song Dynasty this tea has become highly appreciated. It was especially used for Song tea ceremonies, and the ceremony is similar to the Japanese tea ceremony.

In 1876 white tea is mentioned in England. At that time there were two kinds of tea: black and green tea and white tea belonged to the category of black.

Today, white tea is becoming more and more known and increasingly used. This is due to its very good properties and good taste, and very important is the fact that it has an acceptable price although still high.

Since it is made from the same plant and a lot of attention is given to the percentage of the fermentation of white and green tea, they have similar properties and composition. This is additionally confirmed by the fact that white tea was once considered green. The most important chemical components of white tea with which this tea is filled are: antioxidants and EGCG (EpiGalloCatechin Gallate). Another very important property of white tea is a very low percentage of caffeine, 25% less than the green, and incomparably less than black tea. White tea contains an average of 15mg of caffeine (20 mg green and 40mg black tea), which makes it very suitable beverage, and because of this fact it is very healthy, that is more healing than other teas.
